Cashew Butter Oaties

Cashew Butter Oaties (Vegan friendly, Gluten, Sugar free delights)

So, today I decided to go healthy and make these tasty, full of textures and flavorsome cookies. These Vegan-friendly oaty delights, are absolutely scrumptious.

The goodness of milled Flax, Chia and Sesame seeds combined with crunchy, creamy cashew butter, dried cranberries and blueberries, all perfectly blended with oats and almonds to make these melt in your mouth cookies.  These are a great addition to the ‘cookie jar’ for all those  with specific dietary requirements or food intolerances.

INGREDIETS:

150g Oats(gluten free) blended to a flour
50g Almond flour(ground almonds)
100g Vegetable shortening (I use Trex)
50g Milled flax and sesame seeds with dried cranberries and blueberries
20g Chia seeds
150g Crunchy cashew butter (used Meridian)
55g Maple syrup
45g Honey (for vegan version same amount of Agave syrup)
100g Dried cranberries
30g Finely chopped dates
1 large very ripe banana
1tsp baking powder
zest of half an orange

METHOD:

Preheat the oven to 175’C, line two baking trays with baking paper and set aside.

In a bowl combine dry ingredients- oat flour, ground almonds, seed mixes, baking powder.

In another large bowl with a wooden spoon combine melted and cooled shortening, honey (Agave syrup), maple syrup, cashew butter. With a fork mash banana and add to the wet mixture, mix well until all combined. Now add dry ingredients stir well to combine. Add dried cranberries and finely chopped dates together with zest of a half an orange, stir to combine.

Spoon the mixture on to the baking tray covered with parchment paper, flatten to make thinner and bake for about 15minutes.

Take out the oven and transform to cool on the wire rack.

If you feel adventurous and would like to “spice things up” a tad more- you can melt some chocolate and drizzle over them to make that extra little bit special.

And this is much healthier option not even for grownups, but little fingers too, who likes to pick in that cookie jar when you not around
