Protein Chocolate Cake

Protein Chocolate cake
(Gluten Free, Sugar Free, Low fat and High in Protein)

As  you all know by now I love to experiment with various ingredients, textures and flavours.  I had some Dr Zak’s protein bread and a bottle of their egg whites in the pantry and I wanted to create a recipe using these ingredients – now… simple french toast or bread and butter pudding would be too easy an option and, afterall, I like to challenge myself with thinking out of the box with my bakes …so after some smash, wallop, whizz, boom…the outcome was Free-From Protein Chocolate Cake.

INGREDIENTS:
140g Protein bread crumbs (I used Zak’s High Protein bread)
30g Egg Whites ( I used Zack’s pasteurised egg whites)
40ml Unsweetened Almond Milk
110g Fat free Greek Yoghurt
60g Truvia
150g Ground Almonds
40g Tripple Chocolate Protein Powder
100g 100% Coaoa solids Chocolate
1tsp Baking POwder
1tsp Baking soda
30g Raw Cocoa powder

Frosting:
120g Fat free (or lightest 3% fat) cream cheese
100g Crunchy Peanut Butter (I love using Meridian)
Truvia to taste (make it as sweet as you like)
and add some Skinny Hazelnut Syrup for more nutty flavour(optional)

METHOD:

Preheat oven to 180’C/ Fan 160’C    Line 9in tin with parchment paper and set aside

I crumbed the bread in the food processor and added almond flour to it , whizzed it once again and voila- our flour is sorted.

Now transfer all to large mixing bowl, add your dry ingredients, mix well. Add the remaining  wet ingredients and mix well with a wooden spoon once again. Transfer the batter in to the tin and bake for around 20min. It has to still have some crumbs on your skewer when checking.

When done, remove the cake from the oven, let it rest in the tin for 10 minutes, then run the knife around the edge of the tin to loosen the cake and remove it on to wire rack to cool completely before frosting.

For the topping I literally mixed some of my favourite Meridian Nut Butter with sugar free hazelnut syrup and fat free(low fat) cream cheese (you can easily use fat free br-biotic yoghurt instead) dust it fir cocoa powder and it’s done!

The outcome was fantastic and as a ‘fitness bake’ very very tasty.
