Sweet Potato Protein Brownies
(sugar free, gluten free, lean, low carbohydrate and high in protein)

I have this ridiculous and unconditional love for chocolate and anything what comes with it.. well.. Most of the time that would be Peanut Butter ^_^ So, as my craving got better of me, yet again, I thought I will make something little bit different, but yet incredibly tasty- chocolate brownie. Not ordinary one, packed with protein, containing very little carbohydrates and no sugars. I used my favourite protein powder from NRG Fuel to make these bad boys which worked extremely well in getting that glorious gooey, fudgy but yet incredibly light texture. So, I am sharing my creation with you, so you can try them out and tell me what you think.

INGREDIENTS
200g Sweet potato (boiled with a skin, peeled and blended to puree)
85g Dark 85% chocolate (melted andcooled)
2 egg + 1 egg white
55g Sukrin Gold sugar replacement
Pinch of salt and half a tsp vanilla extract
110g Fat free Greek yoghurt
30g Organic Cocoa powder, I used organic Kaizen Living
65g NRG Fuel protein powder, chocolate flavour
45g Sesame flour, I used Sukrin
Half a tsp baking soda

METHOD

Preheat the oven to 180’C and line square 20×20 baking tin with parchment paper.
Now, in a large bowl, place mashed potato, eggs, sweetener, salt, vanilla extract and yoghurt and lightly whisk with a hand whisk or a fork. Now add the rest of dry ingredients, whisk until combined. Add melted and cooled chocolate, whisk lightly again and pour in to prepared tin.
Pop in to the oven and bake for 22-23minutes. It has to be still gooey inside when checking with skewer.
Leave to cool completely in the tin before removing and slicing.

Tips: you can add some fresh strawberries or raspberries in to the batter before baking to add a fruity kick, or… if you like me are PB lovers, add dollops of nut butter and swirl it around the batter before baking to get chocky nuty gorgousness.
