Banana Pancakes

Banana Pancakes
When I make pancakes, I tend to make them as healthy and nutritious as possible. Especially when making them for children, as you try to give your kids the best start in life possible.
These pancakes are beautifully moist and delicious bursting with banana and nutty flavours.

INGREDIENTS
100g roasted blitzed to flour hazelnuts
200g blitzed to flour oats
2 whole eggs
2 egg whites
2 ripe bananas
1tsp baking powder
1tsp cinnamon
2tbsp unsweetened peanut butter
Splash of milk (if needed)
METHOD
Start with blending bananas and eggs in to the nice mush. Add peanut butter, cinnamon and pulse with a blender again. Add hazelnut and oat flour together with baking powder in mix well. If the batter it very thick and can’t be mixed thoroughly- ad a splash of milk and mix well.
Consistency should be rather thick, so you drop from the spoon, not pour.
Fry on the hot non-stick pan, lightly oiled or for children I melt knob of butter on the medium to low heat for couple of minutes each side.
I like to cover the lid on the pan and steam them on the low heat so they nice and moist.
Serve with fresh berry jam or eat them on their own…
