Chocolate Hazelnut Energy Bites

These little tasty and filling treats are perfect snack for the whole family. Made with tasty natural ingredients will give you energy boost when out and about. Pack them for the days out or fill your self up after good workout.
They keep very well refrigerated in the air tight container. Or just freeze for those emergency days when sweet cravings kick in.
220g hazelnuts, roasted and skins off
2tbsp (30g) golden flax seeds
60g gluten free oats
75g dried cranberries
130g soft pitted dates
50g coconut chips, i used scrumptious toasted from CoconutMerchant
3 heaped tbsp Meridian Cocoa Hazelnut butter
1tbsp natural Cocoa powder from FoodThoughts
75g Meridian Maple syrup
or Coconut honey from CoconutMerchant
Pinch of sea salt
1tsp of ground cinnamon
Some desiccated coconut or cocoa powder to coat the balls (or just leave them plain)
Preparation is very simple:- firstly in a large food processor bowl add nuts, oats and flax seed. Whizz all for a minute or two until well blended.
Now add soft dates, dried cranberries, toasted coconut chips together with cocoa powder and salt with cinnamon. Blend all together for a minute and add remaining wet ingredients- maple syrup or coconut honey and our creamy cocoa hazelnut butter.
Blend all for another minute scraping the sides half way through until you see all coming together in to sticky texture when pressed between fingers.
Wet your hands slightly with water and using teaspoon take some of the mix form a ball by rolling in the palms of your hands. Place on the plate with preferred toppings and coat rolling around. Transfer on the tray covered with parchment paper. I made around 50 little energy bites from the ingredients, but amounts truly depends how big you make them.
When you finish making all of the snacks, place in the fridge for at least two hours to set. Then keep them in air tight container for a week in the fridge and around month in the freezer.
To be honest they never last this long in our house because kids absolutely love them!
