I was born and raised in Lithuania and I am proud of my heritage! My country has a rich gastronomic heritage and each region has its own and unique speciality dishes.
However, today I wish to showcase to the people in UK some recipes made with traditional staple from my country- beautiful Rye bread. The rye bread which we buy in supermarkets in the UK suffers from a reputation of being the stodgy, sour and dry. These are often seen as a healthier option, but not necessarily a tastier one. For me, this is more than just my beloved rye bread; it is part of my culture, heritage and my identity… its more than just “food”! As I mentioned earlier in this blog, it is a main staple of life in my Country, the “daily bread”, a welcome to greet a friend or a guest. In our culture, we believe bread is not only a base for such a simple thing as a sandwich, but a vital part of a meal. It can be had with almost any dish at any time of the day – with eggs for breakfast, soup or salad for lunch or even with meat instead of potatoes for dinner.
Eastern European Rye Breads are truly unique; per example some of these breads mature for as long as 48 hours. These breads has a 3 – 4 stage natural fermentation process and each particular type of rye bread has its own “sour” starter (very much like the starter of a Sour Dough bread) or mother dough; these makes each bread unique in its character, colour and flavour. With some of these breads, bakers also use a unique pre-fermentation method called scalding, during which the gluten starts to break down and the natural sugars present in flour start to develop. This makes the bread softer, moister and somewhat sweeter in flavour and easier to digest. Scalding also keeps the moisture in, the bread also stays fresh for longer.
I would like to share couple of my favorite sandwich ideas i absolutely love using Karaway breads.
For this one, I used scalded rye bread. It’s beautiful mellow flavor with earthy tang goes very well with grilled garlic and herb oyster mushrooms layered with chili and and lime avocado salsa, vegan mayonnaise and baby gem lettuce and organic beef tomatoes. Bliss with every mouthful.

This beauty is made with grilled aubergine layered with vegan organic peanut pesto and lovely juicy bell peppers, chopped up marinated black olives for saltiness and tasty tomato for boost of vitamin and fiber goodness.
