Fruity Oat Cookies
Wholesome, sugarfree ( makes around 25 depending on size)
These awesome cookies ticks all the boxes- they are not too sweet, have nice crunchy edges and soft fruity inside. They are packed with dried fruit and little drops of dark chocolate to satisfy that sweet craving. Not forgetting that I am using wholemeal and sometimes wholemeal spelt flour to give better flavour and add some fibre.
Prepared cookie dough can be easily frozen and baked whenever want to make a fresh batch of cookies.
They
keep very well in air tight container for 2-3 days. But to be honest, I don’t
think that they will last this long 😀
INGREDIENTS
220g unsalted butter (room temperature)
250g unrefined brown sugar or coconut sugar (I love CoconutMerchant products.)
1/2tsp fine sea salt
1tsp vanilla extract
3 medium eggs (room temperature)
180g wholemeal or spelt flour
1/2tsp baking soda
1tsp baking powder
1tsp ground cinnamon
150g oats
100g juicy raisins
100g dried apricots
80g chopped nuts of your choice(chopped)
100g small dark chocolate chips (I used sugar free) or just chop some 100% cocoa solids chocolate, Like 100% cacao melts from FoodThoughts
120g crunchy sugar free granola (I added homemade, few recipes you can find here on my website)
Zest of unwaxed lemon
METHOD
Mix well sugar, butter, vanilla and salt. Add eggs 1 at a
time.
Sieve in flour with soda and baking powder.
Now using spatula mix in rest of the ingredients.
Cookie dough is best when kept in the fridge at least couple
hours (preferably over night) thats when it will be easier to
Handle when firmer.
When ready to bake, preheat oven to 180’C (Fan 170’C) , line
the baking tray with parchment.
Now, using icecream scoop or spoon take some dough (try to
make all even) and roll little balls in the palm of your hands.
Place the cookie balls on prepared tray leaving enough space
for them to expand when baking.
Bake for 12-15min or until golden brown.
Take out the oven, leave on the baking tray for a minute and
then move on wire rack until totally cooled. If you will try to remove them
straight from the oven- they might be little brittle and break. Couple minute
resting will firm them up.
Store in the air tight container to keep the cookies nice and
crunchy.
Little advice:- You can roll the balls and freeze them for
those times when you want to bake a cookie. Put in preheated oven straight from
the freezer and bake. That will take slightly longer- 25-30min as they being
made from frozen. Baking time may vary depending on the size of the cookies 🙂

METODAS
