Peanut butter and Banana Muffins

Protein Peanut Butter and Banana Muffins with Dark Chocolate Chips
(Gluten Free and White Cane sugar free)
My day to day diet is rather strict, and even though I bake a lot, I tend not to indulge with all the treats I make.
I have to think of alternatives considering my diet and yet again I came up with these nice and moist muffins, packed with protein and no added fats, which can be topped with mashed banana, peanut butter and some melted dark chocolate icing. But if you want to keep it as clean as possible- have them just like that, as I promise- they are truly nice and fairly innocent treat.
They are very quick and easy to make, so here are the ingredients for you to get stuck in.
INGREDIENTS (makes 8 muffins)
150g Large banana(very ripe)
100g Fat free cottage cheese
2 large egg whites
115g crunchy sugar free peanut butter
65g gluten free oats(blitzed to flour)
1 scoop of protein powder
55g ground almonds
1tsp baking powder
1tsp Truvia
50g dark chocolate chips
METHOD
Preheat oven to 180’C
In a deep mixing bowl, place banana, egg whites and cottage cheese and blend until smooth. Add peanut butter, protein powder(I chose maple syrup flavour), out flour, baking powder with Truvia- mix well with a wooden spoon until combined. Mix in chocolate chips and spread in the muffin tin lined with muffin cases,
Bake for 20-25 minutes or until toothpick inserted comes out clean.
You might want to make some mashed banana wit smooth PB with left over melted dark chocolate to pipe on top.
If you have no Protein powder at hand, you can substitute it with more almond flour increasing quantities to 100g, and adding another half of teaspoon of Truvia for sweetness. It will be same nice just with less protein.
