Peanut Butter Rocky Road
(Fiber loaded with Seeds, Nuts and Superberries)
Gluten Free, Sugar Free, Dairy Free, Low Carbohydrate
I decided to make this glorious chocolate and peanut butter rocky road version filled with wholesome seeds, nuts and berries. It came out as a fairly clean treat, but due to rather high contents of fats naturally coming from nuts, and sugars from berries it’s not such an innocent treat as I would like it to be, but then again.. we need those pleasures in life, and in this case it comes in the form of Chocolate and Peanut butter ^_^ filled with guilt free marshmallow pieces.
So, here i share the recipe for you to try and experiment with the fillings as your heart desires. in this case i didn’t have any dried mangoes or pineapple (which goes really well with nutty chocolaty creamy marshmallowy flavours)

INGREDIENTS
2 tbsp agave syrup
160g peanut butter (I used Meridian)
pinch of salt
70g organic extra virgin coconut oil (I used Dr Zak’s)
80g dark sugar free chocolate ( used Chocologic)
150g guilt free marshmallow (cut in to pieces)
50g walnuts
50g almonds
80g toasted linseed, pumpkin seed and sunflower seed mix
80g dried cranberries
100g dried mango or pineapple (chopped)
handful of goji berries and shredded coconut
METHOD:
Melt the first 5 ingredients in the microwave, stir until smooth and set aside to cool.
Roughly chop almonds, walnuts and marshmallow. Fully line the loaf tin with baking paper, skater seeds, chopped nuts and fruits together with marshmallow and pour cooled chocolate peanut butter mix. Spread goji berries and grated coconut over the top, cover and pop in to the freezer for at least couple of hours..
Remove Rocky Road from the freezer, let it soften slightly and feel free to chop t in to desired size pieces.
